Freeze in a large plastic tray until frozen. This should take about 4 hours. Whisk the granita well after the first hour to prevent large ice crystals from forming. When fully frozen, scrape the granita into a slush with a fork. Keep in a rigid container in the freezer for up to 1 week.

To make the jelly, soak the gelatine in cold water for 5 minutes. Warm the honey in a pan over a medium heat and let it bubble for 3 minutes. Drain the gelatine and squeeze dry, then add to the honey with the wine. Stir over the heat for 2 minutes until the gelatine has melted. Strain into six small glasses (about 150ml) and cool. Refrigerate for 2 hours until set.

To serve, sweeten the yogurt with sugar to taste, then spoon over the jelly and top with the granita.

Punch is a general term for any of a wide assortment of mixed drinks, either soft or alcoholic, often rum, generally containing fruit or fruit juice.The drink was brought from India to England in the early seventeenth century, and from there it was introduced into other countries.Punch is typically served at parties in large, wide bowls, known as punch bowls.

The word punch is a loanword from Hindi panch and the drink was made from five different ingredients: spirit, sugar, lemon, water, and tea or spices.The original drink was named paantsch, which comes from the Parsi word panj for five.The word "five" ultimately from Sanskrit panchan-s.

Alternatively, it may have derived from the word puncheon, a cask that held 72 gallons, from which a punch bowl could be made.

The drink was brought back from India to England by the sailors and employees of the British East India Company in the early seventeenth century, and from there it was introduced into other European countries.

The term punch was first recorded in British documents dating back to 1632. At that time, most punches were of the Wassail type, or with a wine or brandy base, but by around 1655, when Jamaica came out with rum, the 'modern' punch was born and by 1671, there were references to punch houses.

Today, many soft drink manufacturers distribute varying types of "fruit punch" beverages. These are usually colored red and despite the name, most brands garner only a small fraction of their flavor from actual fruit, the majority coming from sugar or corn syrup, citric acid and artificial flavors.

Cups are another type of punch. An English tradition, served before the departure of a hunting party, but today are served at a variety of social events such as garden parties, cricket and tennis matches and at picnics. Cups are generally lower in alcohol to punches and usually have wine, cider, sloe gin, or other low alcohol liqueur as the base, and often include quantities of fruit juices and/or soft drinks. Regulatory warnings and safety testing

In August 2004, the US Food and Drug Administration issued a warning letter to Flora, Inc. for violating section 201(g)(1) of the Federal Food, Drug, and Cosmetic Act (the Act) [21 U.S.C. § 321(g)(1)]. Flora made twelve unfounded health claims about the purported benefits of noni juice as a medical product, in effect causing the juice to be evaluated as a drug. Under the Act, this necessitates all safety and clinical trial evidence for the juice providing such effects in humans.

The FDA letter also cited 1) absent scientific evidence for health benefits of noni phytochemicals, scopoletin and damnacanthal, neither of which has been confirmed with biological activity in humans, and 2) lack of scientific foundation for health claims made by two proponents of noni juice, Dr. Isabella Abbot and Dr. Ralph Heinicke.

Two other FDA letters have been issued for the same types of violations.

In the European Union, after safety testing on one particular brand of noni juice (Tahitian Noni), approval was granted in 2002 as a novel food by the European Commission for Health and Consumer Protection Directorate-General. In their report, the European Commission's Scientific Committee made no endorsement of health claims.

No noni products have achieved sufficient scientific foundation for being licensed as medicines or therapies. Companies today must still apply to the European Commission for Health and Consumer Protection Directorate-General to have their own brand of noni juice included as a novel food under the initial approval.

Health and research problems
In 2005, two scientific publications described incidents of acute hepatitis caused by ingesting noni. One study suggested the toxin to be anthraquinones, found in roots, leaves and fruit of the noni, while the other named juice as the delivery method.

This was, however, followed by a publication showing that noni juice 1) was not toxic to the liver even when consumed in high doses, and 2) contained low quantities of anthraquinones which are potentially toxic to liver tissue.

The case reports of hepatitis were reviewed by the European Food Safety Authority (EFSA), wherein it was concluded that no causal link could be established. The potential for toxicity caused by noni juices remains under surveillance by EFSA, individual food safety authorities in France, Finland and Ireland, and medical investigators in Germany. A review of toxicity tests and the safety issues surrounding noni juice has been published.

The Physicians Desk Reference ("PDR") for Non-Prescription Drugs and Dietary Supplements lists only one particular commercial brand of noni juice, with no side-effects mentioned.[18]Consumers of noni juice are advised to carefully check labels for warnings which may say, "Not safe for pregnant women" or "Keep out of reach of children."

Some commercial brands of noni juice may be high in potassium[citation needed]. While potassium is a valuable nutrient in a normal diet, persons with advanced kidney disease cannot excrete it properly and should avoid noni juice which has been known to cause hyperkalemia. Of related significance is a report showing high variability in mineral contents between various brands of noni juice.

Athletes intending to use noni juice to supplement their diet should be aware that two brands of noni juice are listed on ConsumerLab.com's "Athletic Banned Substance Screening Program" as having been screened for substances on the World Anti-Doping Code Prohibited List.

Preliminary medical research
Noni has increasingly stimulated the interest of medical science, with 145 papers published since 1994 and 55 just since 2006 (search "noni" and "morinda"; PubMed search, January 2008). Despite the large market for juice products and research developments, the nutrient and phytochemical profiles of noni have not been extensively studied.

Furthermore, numerous health claims made in noni juice marketing are not supported by scientific research in human clinical trials, only one cancer study completed under NIH peer-review in 2006 has been conducted, the results of which remain unpublished as of August 2007.

Likewise, in a university-based pilot study funded by the noni juice manufacturer, Tahitian Noni International, Inc., it was shown that noni juice consumption may lower blood cholesterol levels. Completed in 2006, however, the results of this study have not been published under peer-review and have met critical judgment by experts.

Laboratory studies have investigated noni's effect on the growth of cancerous tissue in mice.One such study in vitro found that noni reduced growth of capillary vessels sprouting from human breast tumor explants and, at increased concentrations, caused existing vessels to degenerate.It remains unknown whether such effects occur in vivo in other animal models or in cancer patients.

Another study showed noni juice to inhibit formation of cancer cells in rats (using detection methods of biochemical markers called DNA adducts). It further showed a reduced number of DNA adducts in rats induced with a carcinogen. The same study showed effective antioxidant properties of noni juice compared with those of vitamin C, grape seed powder, and pycnogenol. The results indicated reduced carcinogen-DNA adduct formation in this laboratory model and antioxidant activity that may be relevant to anti-cancer mechanisms.

As such findings have neither been confirmed by other laboratory experiments nor demonstrated in expert-reviewed human clinical trials, no inference can be made about whether noni has anti-cancer properties.

Coconut water is the clear liquid inside young coconuts (fruits of the coconut palm), not to be confused with coconut milk. As the fruit matures, the coconut water gradually is replaced by the coconut meat and air. A very young coconut has very little meat, and the meat is very tender, almost a gel. Coconut water has long been a popular drink in the tropics, especially in Tropical Asia and Trinidad and Tobago, where it is available fresh or bottled. It is naturally fat-free and low in food energy (16.7 calories or 70 kilojoules per 100 grams).

Coconuts for drinking are carefully packaged and sold in many places. These are typically Asian coconuts whose outer green husk has been removed, and the remainder wrapped in plastic. In Central America, particularly in Costa Rica, it is found and sold in strategic highway stops or on the beaches; there, the coconut water is called "agua de pipa", and the coconut is cut in front of the customer to ensure its freshness. Coconut water can also be found in regular cans or tetra paks (and often has coconut pulp or coconut jelly added) and is also marketed as a sports drink because of its high potassium and mineral content.

While people prefer different flavors of coconut water, generally a green coconut with some age spots is the most popular. Coconuts from various parts of the world also differ in taste. For example, Indian coconuts tend to be salty and Brazilian coconuts have a sweeter water and flesh.

Coconut water is also used as an intravenous fluid in some third world countries where medical saline is unavailable.

The carambola or star fruit (Averrhoa carambola) is native to Southeast Asia and was probably introduced to Florida about 100 years or so ago. It’s a small tree that usually bears fruit twice a year… once in June and again around October. That’s not engraved in stone, however. For instance, one year my tree started blooming and bearing fruit in early May and never stopped until Thanksgiving. The same tree this year, still hasn’t bloomed yet, as of this writing. The fruit ripens rapidly and varies in size from 4 to 5 inches long and 2-1/2 to 3 inches in diameter. I’ve seen bigger fruits…. and I’ve seen smaller, but regardless of size, they’re all delicious.

The fruit is golden yellow when ripe and it has 4 to 6 deep ribs along its length. Thus, when you cut it into slices, you get star shapes. Which is why the common name is “star fruit”.

There are two versions of the carambola: sweet and tart. Actually, there are variations within the versions, as well. I know my Dad’s tree is extremely sweet while mine is just a bit less sweet. I had a tart one before Hurricane Charley hit, piling debris from a neighbor’s house on top of my young tree and killing it.

Tree ripened carambolas are far superior to those ripened on a shelf indoors. And, if you happen to have the tart variety, or even one like mine that isn’t so intensely sweet, it helps to strip off the very edges of those ridges and discard them. I’ve heard that there is a concentration of oxalic acid in those ridges that seem to spoil the flavor. I’ve eaten the fruits after trimming the edges and also without trimming… it all depends on your taste buds and the individual tree, I guess.

The young carambola tree may be damaged or killed at temperatures below 29 F., although a mature tree can handle temperatures as low as 21 F. for brief periods of time. It grows well in Zone 10 where we rarely see anything below 30F., but you can also grow it just a bit further north or in a protected area.

And, if you are dieting, don’t pass up the carambola fruit. A cup of raw carambola contains just 43 calories and about 10 grams carbohydrate. With 29 mg vitamin C and 207 mg potassium, it can definitely be included in your “good for you” list of fruits.

6 cups fresh jackfruit
Juice of one lime
1 cup sweetened shredded coconut
¾ cup golden raisins
16 ounces sour cream
¾ to 1 cup toasted walnuts – optional

Method:
In a large mixing bowl, combine jackfruit, limejuice, coconut, raisins and sour cream. If, after combining all ingredients, you feel mixture needs more of one above item, slowly add according to your taste. Add and mix in toasted walnuts just before serving.

NOTE: Place walnuts on a cookie sheet, single layer, and toast 8 to 10 minutes in a preheated 300-degree oven. Turn walnuts over after 4 or 5 minutes.

This is definitely one of my favorite smoothie recipes, bursting will color, health and flavor. I like to use fresh, homemade carrot juice, but if a juicer is not available, most stores carry carrot juice in the refrigerated goods section.

Serves 4

Prep Time: 5 minutes

Ingredients:

16 oz. frozen strawberries, thawed slightly
½ cup chopped mango
1 ½ cups carrot juice
1 cup plain unsweetened soy yogurt
¼ cup honey
1 T. lemon juice

Preparation:
